Cracker Pie

Ingredients:
    
    3 egg whites
    1 cup sugar
    1 teaspoon vanilla
    14 saltine crackers
    3/4 cup pecan pieces
    1 teaspoon baking powder

Directions:

    Heat oven to 350. Butter a pie pan and set aside. Put crackers in a zip bag and crush with rolling pin, into fine crumbs and pour into a bowl. Add pecans and baking powder and mix together. Whip egg whites until stiff. Stir in sugar and vanilla. Pour egg white mixture over cracker mixture and mix well. Pour mixture into buttered pie pan and bake till golden brown and crusty. Cool and top with Cool Whip. Makes 1 pie. Enjoy!! You won't believe it was made with crackers!
